1 English muffin
¼ cup pasta sauce
¼ tsp. garlic powder
¼ tsp. dried basil
½ c. spinach
2 mushrooms
2 oz. chicken breast (pre-cooked – can get from the salad bar)
2 oz. shredded low-fat mozzarella
¼ tsp. red pepper flakes
- Cut the English muffin in half. Add a spoonful of pasta sauce to each side. Sprinkle on garlic powder and basil to taste.
- Add spinach, mushrooms, and chicken on top of the sauce. Sprinkle 1 oz. of cheese on each side.
- Place in microwave for 1 minute or until cheese is melted. Sprinkle red pepper flakes on top. Serve warm.
- Tip: You can add other lean protein or any vegetables that you like before the cheese as desired.
