Tortilla Roll-Up

(Serves 1)

1 (6-inch) flour tortilla
2 Tbsp. hummus
1 oz. turkey or chicken
¼ c. cucumber slices
¼ c. tomato slices
½ c. carrot slices
1 Tbsp. low fat ranch dressing

  1. Spread the tortilla with hummus and top with turkey, cucumber, tomato and carrots.
  2. Roll the edge of the tortilla toward the center and continue to roll up the filling inside. (The dressing can be used as a dip or rolled inside with the other ingredients.)
  3. To serve, cut the roll-up in half.
