Tuna Salad Pita

(Serves 1)

½ c. frozen peas
1 small can albacore tuna in water
1 c. spinach
2 Tbsp. low-fat mayo
1 Tbsp. spicy brown mustard
1 tsp. black pepper
Dash of hot sauce
1 whole wheat pita

  1. Put the peas in a microwave safe bowl and heat just heated through. Let cool.
  2. Mix in the can of tuna (drained), spinach, mayo, and mustard. Mix in black pepper and hot sauce to taste.
  3. Scoop into the pita and enjoy.
  4. Tip: You can replace 3 diced hard-boiled eggs for the tuna for a variation.
