½ c. frozen peas
1 small can albacore tuna in water
1 c. spinach
2 Tbsp. low-fat mayo
1 Tbsp. spicy brown mustard
1 tsp. black pepper
Dash of hot sauce
1 whole wheat pita
- Put the peas in a microwave safe bowl and heat just heated through. Let cool.
- Mix in the can of tuna (drained), spinach, mayo, and mustard. Mix in black pepper and hot sauce to taste.
- Scoop into the pita and enjoy.
- Tip: You can replace 3 diced hard-boiled eggs for the tuna for a variation.
